High Protein Greek Salad

Perfect to bring to the office for lunch or to eat at home if you are short on time.

2 servings      5 minutes     14g protein

 

Ingredients:

  • 1 large cucumber cubed
  • 4 ripe tomatoes cubed
  • 1 red pepper (no seeds and chopped)
  • 1/4 small red onion (thinly sliced)
  • 1 cup canned garbanzo beans (rinsed and drained)\
  • chopped black olives
  • feta cheese
  • red wine vinegar


Preparation:

  • Combine veggies and beans
  • Only dress the portion that you are about to eat. If you are planing to save some for later, don't dress it until you're ready to eat it so it stays fresh
  • Toss
  • Enjoy!
